Greening an English Program – Food, etc.

Several of our most successful changes were in the areas of food purchasing and consumption. For our mid-term beach barbecue, we shifted from a meat-heavy menu to one featuring primarily vegetarian dishes. Also, we found a caterer (Da Spot in Honolulu) that serves more environmentally responsible food. Their vegetables are primarily local, and their meats are all natural. We also started using the same caterer for our teacher meetings.

In addition, we stopped using disposable plates and utensils. The program director purchased reusable plates and utensils are now in the student lounge and are used at school functions. Prior to this, disposable plates and utensils were used for our lunch activities. Secondhand coffee mugs we purchased from a local thrift store and collected from staff members to replace the styrofoam coffee cups that had previously been provided. Students are now to wash dishes and mugs after using them. This has worked pretty well, but staff members also help with cleaning up.

For our beach barbecue, students and staff members are now asked to bring their own plates and utensils. Specifically, we encourage them to bring sealable containers. Many students and staff members brought containers to our last barbeque, and thus we were able to give away all of the leftovers. Students that did not bring containers used reusable dishes and utensils provided by the school.
